I hoard ribbons too, so I've got a lot to say about this!
For one, you can use them for just about anything. Different colored ribbons are really good for all sorts of things. Off the top of mind for uses I think of tying them on sachets or and arround jars, or even with knot magic. And you could definitely use the yellow one on a bouquet for Apollo if you wanted!
As for number two I generally assume the colour correspondences are the same as with candles, and I've never read anything or heard anything that would lead me to think otherwise. I'm pretty sure colour meanings are the same for all types of objects.

Ribbons have many uses in witchcraft. Like Ilene said, they can be used to tie sachets, to wrap jars, etc. Ribbons are best used based on their colour correspondence, though. That's just my recommendation. Ribbons can represent anything you want it to-for example, I use it to seal the magic in whatever I've (hue) crafted. It's up to you!!

Yes, the colour correspondences are basically the same.
